Preheat your oven to 400°F (200°C). Prepare a roasting pan by lining it with foil and placing a roasting rack inside.
In a small bowl, mix together the olive oil, lemon zest, minced garlic, chopped rosemary, thyme, and sage. Season generously with salt and pepper.
Rinse the chicken inside and out, and pat it dry with paper towels. Place the chicken in the prepared roasting pan.
Rub the herb mixture all over the chicken, making sure to get under the skin of the breast and thighs. Place lemon slices inside the cavity of the chicken.
Arrange the chopped vegetables around the chicken in the roasting pan. Drizzle the vegetables with olive oil and season with salt and pepper.
Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices every 20 minutes.
Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables and pan juices.
This chicken was absolutely incredible! The lemon and herbs created such a delicious aroma and flavor. The skin was perfectly crispy, and the meat was so tender and juicy. Will definitely be making this again!
It was good, but not amazing. The chicken was cooked well, and the herbs were tasty. I thought the lemon flavor could have been more pronounced. It was a little bland, I think.
The chicken was good, but I felt it could have used a bit more seasoning, particularly salt and pepper. The herbs were fragrant, and the chicken was cooked correctly. But it lacked that extra punch of flavor.
Excellent recipe! The lemon flavor was bright and fresh, and the herbs complemented the chicken perfectly. The cooking instructions were clear and easy to follow. The family loved this dish!
Fantastic recipe! Easy to follow, and the results were restaurant-quality. The chicken was so flavorful and moist. Everyone in my family loved it. This will be a regular meal in our house!
