
Preheat your oven to 400°F (200°C). Prepare a roasting pan by lining it with foil and placing a roasting rack inside.
In a small bowl, mix together the olive oil, lemon zest, minced garlic, chopped rosemary, thyme, and sage. Season generously with salt and pepper.
Rinse the chicken inside and out, and pat it dry with paper towels. Place the chicken in the prepared roasting pan.
Rub the herb mixture all over the chicken, making sure to get under the skin of the breast and thighs. Place lemon slices inside the cavity of the chicken.
Arrange the chopped vegetables around the chicken in the roasting pan. Drizzle the vegetables with olive oil and season with salt and pepper.
Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices every 20 minutes.
Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables and pan juices.
