Add the chopped bell peppers, red onion, zucchini, and cherry tomatoes to the bowl with the chicken. Toss everything together, ensuring the vegetables are also coated with the marinade.
Spread the chicken and vegetable mixture evenly in the prepared baking dish.
Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the vegetables are tender. Stir halfway through to ensure even cooking.
Remove the baking dish from the oven and sprinkle the crumbled feta cheese over the top.
Let it sit for a few minutes to allow the feta to slightly melt. Serve hot, garnished with fresh parsley if desired. Enjoy!
