Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 2-inch pieces - 7.8 ml
  • 1 large onion, chopped - 0.8 cm
  • 2 cloves garlic, minced - 1.4 mg
  • 1/4 cup olive oil - 7.9 qt
  • 1 cup chicken broth - 8.6 pinch
  • 1/2 cup dried apricots, halved - 5.8 bag
  • 1/4 cup slivered almonds - 3.4 whole
  • 1 tbsp honey - 3.8 fl oz
  • 1 tsp ground ginger - 3.2 as needed
  • 1/2 tsp ground cinnamon - 2.4 drop

Cooking Steps

Step 1

In a large bowl, combine the chicken pieces with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of ginger, 1/2 teaspoon of cinnamon, and a pinch of saffron. Mix well and let it marinate for at least 20 minutes.

Step 2

Heat olive oil in a large pot or tagine over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Step 3

Add the marinated chicken to the pot and brown on all sides. Remove the chicken and set aside.

Step 4

Pour in the chicken broth, add the honey, and stir in the remaining spices (ginger, cinnamon, saffron). Bring to a simmer.

Step 5

Return the chicken to the pot. Add the dried apricots and almonds. Cover and simmer for 30 minutes, or until the chicken is cooked through and tender.

Step 6

While the tagine is simmering, prepare the couscous according to package directions.

Step 7

Serve the chicken tagine over a bed of fluffy couscous. Garnish with fresh cilantro and toasted almonds.
