This vibrant and flavorful Moroccan Tagine is a celebration of sweet and savory flavors, featuring tender chicken simmered in a rich sauce of apricots, almonds, and aromatic spices. The combination of ginger, cinnamon, and saffron creates a warming and exotic profile that is both comforting and exciting. Served over fluffy couscous, this dish is perfect for a special dinner or a cozy weeknight meal. The sweetness of the apricots complements the savory chicken beautifully, while the almonds add a delightful crunch and nutty flavor. This tagine is not only delicious but also visually stunning, making it a true culinary experience. The key to a great tagine is patience, allowing the flavors to meld together slowly as it simmers, creating a depth that is truly unforgettable. Garnish with fresh cilantro and a sprinkle of toasted almonds for an extra touch of elegance.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 2-inch pieces - 7.8 ml
  • 1 large onion, chopped - 0.8 cm
  • 2 cloves garlic, minced - 1.4 mg
  • 1/4 cup olive oil - 7.9 qt
  • 1 cup chicken broth - 8.6 pinch
  • 1/2 cup dried apricots, halved - 5.8 bag
  • 1/4 cup slivered almonds - 3.4 whole
  • 1 tbsp honey - 3.8 fl oz
  • 1 tsp ground ginger - 3.2 as needed
  • 1/2 tsp ground cinnamon - 2.4 drop

Cooking Steps

Step 1

In a large bowl, combine the chicken pieces with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of ginger, 1/2 teaspoon of cinnamon, and a pinch of saffron. Mix well and let it marinate for at least 20 minutes.

Step 2

Heat olive oil in a large pot or tagine over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Step 3

Add the marinated chicken to the pot and brown on all sides. Remove the chicken and set aside.

Step 4

Pour in the chicken broth, add the honey, and stir in the remaining spices (ginger, cinnamon, saffron). Bring to a simmer.

Step 5

Return the chicken to the pot. Add the dried apricots and almonds. Cover and simmer for 30 minutes, or until the chicken is cooked through and tender.

Step 6

While the tagine is simmering, prepare the couscous according to package directions.

Step 7

Serve the chicken tagine over a bed of fluffy couscous. Garnish with fresh cilantro and toasted almonds.

This is a fantastic recipe! The combination of flavors is amazing, and the chicken is so tender and succulent. I especially loved the addition of almonds for the crunchy texture. Absolutely delicious!

A very good and easy recipe. I loved the flavors, and the almonds gave it a nice texture. The only thing I would change is maybe adding a little more liquid to keep the chicken from drying out. Still a great meal, though.

This recipe is amazing! The flavors are complex and delicious. The chicken was falling off the bone. I made a double batch because I knew it would be a hit. Highly recommend!

This tagine was really tasty! The flavors were well-balanced and the chicken was tender. I made it for a dinner party, and everyone loved it. The almonds provided a nice contrast to the sweet apricots.

Not a fan. The flavors were too overpowering for me. It tasted a bit too sweet and I didn't enjoy the spices. I won't be making this again.
