Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 2-inch pieces - 6.7 package
  • 1 teaspoon salt - 7.7 to taste
  • 1/2 teaspoon black pepper - 5.3 pinch
  • 1 teaspoon ground ginger - 3.8 g
  • 1/2 teaspoon ground cinnamon - 4.9 quarter
  • Pinch of saffron threads - 3.4 whole
  • 2 tablespoons olive oil - 7.5 pcs
  • 1 large onion, thinly sliced - 1.0 box
  • 2 cloves garlic, minced - 4.9 package
  • 1.5 cups chicken broth - 10.3 tsp

Cooking Steps

Step 1

In a large bowl, combine the chicken pieces with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of ginger, 1/2 teaspoon of cinnamon, and a pinch of saffron. Toss to coat evenly.

Step 2

Heat olive oil in a tagine or a large, heavy-bottomed pot over medium heat. Add the chicken and brown on all sides. Remove the chicken and set aside.

Step 3

Add the sliced onion to the pot and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Return the chicken to the pot. Add the chicken broth, dried apricots, honey, and preserved lemon (if using). Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is cooked through and tender.

Step 5

Stir in the chopped cilantro and toasted almonds. Taste and adjust seasoning as needed.

Step 6

Serve the tagine hot over a bed of couscous. Garnish with additional cilantro and almonds, if desired.
