In a large bowl, combine the chicken pieces with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of ginger, 1/2 teaspoon of cinnamon, and a pinch of saffron. Toss to coat evenly.
Heat olive oil in a tagine or a large, heavy-bottomed pot over medium heat. Add the chicken and brown on all sides. Remove the chicken and set aside.
Add the sliced onion to the pot and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Return the chicken to the pot. Add the chicken broth, dried apricots, honey, and preserved lemon (if using). Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is cooked through and tender.
Stir in the chopped cilantro and toasted almonds. Taste and adjust seasoning as needed.
Serve the tagine hot over a bed of couscous. Garnish with additional cilantro and almonds, if desired.
Enjoy!
Wow! This was such a wonderful dish. The spices created an amazing depth of flavor, and the chicken was perfectly cooked. I loved the toasted almonds on top.
Really enjoyed this. The spices were spot on, and the apricots gave it a wonderful sweetness. I didn't have a tagine, but a regular pot worked fine.
Good overall. I would recommend adding more broth as it dried up a little during cooking. The spices were really nice.
This recipe is perfect! The spices and apricots combined to create an amazing flavor. The chicken was perfectly cooked and juicy. Best meal I've made this year!
This recipe is a keeper! The aroma while it was cooking was amazing, and the taste exceeded my expectations. The couscous was the perfect accompaniment.
