In a large bowl, combine the chicken pieces with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of ginger, 1/2 teaspoon of cinnamon, and a pinch of saffron. Toss to coat evenly.
Heat olive oil in a tagine or a large, heavy-bottomed pot over medium heat. Add the chicken and brown on all sides. Remove the chicken and set aside.
Add the sliced onion to the pot and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Return the chicken to the pot. Add the chicken broth, dried apricots, honey, and preserved lemon (if using). Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is cooked through and tender.
Stir in the chopped cilantro and toasted almonds. Taste and adjust seasoning as needed.
Serve the tagine hot over a bed of couscous. Garnish with additional cilantro and almonds, if desired.
Enjoy!
It was good, but I felt like the chicken could have been a bit more flavorful. Maybe marinating it beforehand would help. The apricots were a nice touch though.
It was okay. I think it needed more salt, and the sauce wasn't as thick as I would have liked. The apricots were a nice addition though.
Very flavorful and easy to make. The honey gives it a lovely sweetness. I would definitely make this again.
Excellent recipe. The instructions were easy to follow, and the result was a flavorful and satisfying meal. The apricot flavor really shines.
This tagine was fantastic. The spice blend was perfect, and the sauce was rich and flavorful. I added a little extra honey as I prefer a sweeter taste. Highly recommend!
