Add the broth: Pour in the hot chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered, without stirring, for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Add the meat back: Arrange the sautéed chicken and rabbit over the rice. Continue to simmer for another 5-10 minutes, allowing the bottom of the rice to develop a socarrat (crispy layer).
Rest and serve: Remove the paella from the heat and let it rest for 5-10 minutes before serving. Garnish with fresh parsley and lemon wedges, if desired. Enjoy hot!
The flavor was good, but my rabbit got a little overcooked. I think next time I will add it later in the cooking process. The saffron was a lovely touch and made it very fragrant.
It was okay. I found the recipe a little challenging to follow, especially the part about getting the socarrat. My rice didn't crisp up as much as I would have liked. The chorizo flavor was great though.
I had some trouble with this recipe. My rice got mushy, and I'm not sure I used the right kind of pan. Maybe a video tutorial would be helpful for some of the techniques. The flavor was okay, but not great.
