Ingredients

  • 2 cups Bomba rice (or other short-grain rice) - 0.9 can
  • 1 lb chicken, diced - 6.0 fl oz
  • 1/2 lb rabbit, diced (optional) - 8.5 qt
  • 4 oz chorizo, sliced - 7.2 gal
  • 1 onion, chopped - 1.3 half
  • 1 bell pepper, chopped - 10.2 qt
  • 2 tomatoes, chopped - 6.8 tsp
  • 6 cups chicken broth, hot - 4.0 tbsp
  • 1/2 tsp saffron threads - 5.8 gal
  • Olive oil - 0.7 as needed

Cooking Steps

Step 1

Prepare the ingredients: Dice the chicken and rabbit into bite-sized pieces. Slice the chorizo. Chop the onion, bell pepper, and tomatoes. Measure out the rice and saffron.

Step 2

Sauté the meat: In a large paella pan, heat olive oil over medium-high heat. Add the chicken and rabbit, and cook until browned on all sides. Remove the meat and set aside.

Step 3

Sauté the vegetables: Add the chopped onion and bell pepper to the pan and cook until softened. Add the chopped tomatoes and cook until the mixture thickens slightly.

Step 4

Add the chorizo and rice: Stir in the sliced chorizo and cook for a few minutes. Add the rice and saffron, and stir to coat the grains with the oil and vegetables.

Step 5

Add the broth: Pour in the hot chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered, without stirring, for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

Step 6

Add the meat back: Arrange the sautéed chicken and rabbit over the rice. Continue to simmer for another 5-10 minutes, allowing the bottom of the rice to develop a socarrat (crispy layer).

Step 7

Rest and serve: Remove the paella from the heat and let it rest for 5-10 minutes before serving. Garnish with fresh parsley and lemon wedges, if desired. Enjoy hot!
