Ingredients

  • 1 tbsp olive oil - 7.1 tbsp
  • 1 lb chicken thighs, cut into pieces - 2.8 bag
  • 1/2 lb chorizo, sliced - 9.7 whole
  • 1 onion, chopped - 5.9 inch
  • 1 red bell pepper, chopped - 4.2 inch
  • 3 cloves garlic, minced - 1.7 pinch
  • 2 tbsp tomato paste - 7.1 to taste
  • 1 tsp smoked paprika - 1.1 l
  • 1/2 tsp saffron threads - 8.2 quarter
  • 1 1/2 cups paella rice or Arborio rice - 10.2 tsp

Cooking Steps

Step 1

In a large paella pan or skillet, heat olive oil over medium heat. Add chicken and chorizo and cook until browned.

Step 2

Add onion, bell pepper, and garlic to the pan and cook until softened, about 5 minutes.

Step 3

Stir in tomato paste, smoked paprika, saffron threads, and rice. Cook for 2 minutes, stirring constantly.

Step 4

Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.

Step 5

Add shrimp, mussels, and clams to the paella. Cover and cook until the seafood is cooked through and the shells have opened, about 5-7 minutes. Discard any unopened shells.

Step 6

Garnish with parsley and lemon wedges. Serve immediately.

Step 7

Let it rest for 5-10 minutes before serving. This allows the flavors to meld and the rice to absorb any remaining liquid.
