In a bowl, combine beef strips with soy sauce, cornstarch, and ginger. Marinate for at least 15 minutes.
Prepare the sauce: In a small bowl, whisk together chili bean paste, soy sauce, sugar, rice vinegar, sesame oil, and chicken broth.
Heat vegetable oil in a wok or large skillet over high heat. Add beef and stir-fry until browned, about 2-3 minutes. Remove beef and set aside.
Add garlic and Sichuan peppercorns to the wok and stir-fry for 30 seconds until fragrant. Be careful not to burn the garlic.
Add sliced onions and stir-fry for 1 minute, then add sliced bell peppers and stir-fry for another 2 minutes until slightly softened.
Pour the prepared sauce into the wok and bring to a simmer. Add the cooked beef back to the wok and stir to coat.
Cook for 2-3 minutes, until the sauce has thickened and the beef is heated through. Garnish with sesame seeds and chopped scallions before serving.
Quick and easy weeknight dinner. I followed the recipe exactly and the flavors were fantastic. Next time, I'll add a bit more chili bean paste for extra heat!
Really enjoyed this! The use of Sichuan peppercorns gives it a unique and delicious flavor. I'm glad the heat level is adjustable.
Excellent! This is a fantastic Sichuan dish. The flavor is authentic, and the preparation is easy. The serving suggestion with steamed rice is spot on.
This is now a regular in our house! The recipe is so easy to make, and it tastes like something from a high-end restaurant. The peppercorns give it a wonderful tingly sensation.
The flavor was good, but the beef was incredibly chewy. I'm not sure what I did wrong. I might try again, but I'll need to adjust the cooking time.
