
In a bowl, combine beef strips with soy sauce, cornstarch, and ginger. Marinate for at least 15 minutes.
Prepare the sauce: In a small bowl, whisk together chili bean paste, soy sauce, sugar, rice vinegar, sesame oil, and chicken broth.
Heat vegetable oil in a wok or large skillet over high heat. Add beef and stir-fry until browned, about 2-3 minutes. Remove beef and set aside.
Add garlic and Sichuan peppercorns to the wok and stir-fry for 30 seconds until fragrant. Be careful not to burn the garlic.
Add sliced onions and stir-fry for 1 minute, then add sliced bell peppers and stir-fry for another 2 minutes until slightly softened.
Pour the prepared sauce into the wok and bring to a simmer. Add the cooked beef back to the wok and stir to coat.
Cook for 2-3 minutes, until the sauce has thickened and the beef is heated through. Garnish with sesame seeds and chopped scallions before serving.
It was alright. The beef was a little tough, and I felt the sauce was a bit too oily. Maybe I overcooked the beef. The flavor profile was there, though.
Absolutely delicious! The doubanjiang and Sichuan peppercorns really make this dish authentic. I loved the balance of flavors and the tender beef. Will definitely make this again!
