This Spicy Peanut Noodles recipe is a flavor explosion in a bowl! The sauce is made with peanut butter, soy sauce (or tamari for gluten-free), rice vinegar, maple syrup, chili garlic sauce, ginger, and garlic. Adjust the amount of chili garlic sauce to your preferred spice level. Tossed with cooked noodles and topped with crunchy peanuts, cilantro, and a squeeze of lime, this dish is sure to become a new favorite. Feel free to add vegetables like bell peppers, carrots, or spinach for extra nutrients and texture. For a protein boost, consider adding tofu or edamame.

Ingredients

  • 8 ounces noodles (spaghetti, udon, or rice noodles) - 7.3 ml
  • 1/4 cup peanut butter - 8.9 jar
  • 2 tablespoons soy sauce (or tamari for gluten-free) - 5.0 quarter
  • 2 tablespoons rice vinegar - 1.6 quarter
  • 1 tablespoon maple syrup (or honey) - 8.0 cup
  • 1-2 teaspoons chili garlic sauce (adjust to taste) - 3.1 package
  • 1 teaspoon grated ginger - 1.1 inch
  • 2 cloves garlic, minced - 5.7 kg
  • 2-4 tablespoons water, as needed - 4.7 gal
  • Chopped peanuts, for garnish - 7.9 whole

Cooking Steps

Step 1

Cook the noodles according to package directions. Drain and rinse with cold water to prevent sticking. Set aside.

Step 2

In a medium bowl, whisk together the peanut butter, soy sauce (or tamari), rice vinegar, maple syrup, chili garlic sauce, grated ginger, and minced garlic.

Step 3

Add water, one tablespoon at a time, until the sauce reaches your desired consistency.

Step 4

In a large bowl, combine the cooked noodles and the peanut sauce. Toss well to coat.

Step 5

Serve immediately, garnished with chopped peanuts, fresh cilantro, and a squeeze of lime.

Step 6

Optional: Add your favorite vegetables (bell peppers, carrots, spinach) for extra nutrients and texture.
