Cook the noodles according to package directions. Drain and rinse with cold water to prevent sticking. Set aside.
In a medium bowl, whisk together the peanut butter, soy sauce (or tamari), rice vinegar, maple syrup, chili garlic sauce, grated ginger, and minced garlic.
Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
In a large bowl, combine the cooked noodles and the peanut sauce. Toss well to coat.
Serve immediately, garnished with chopped peanuts, fresh cilantro, and a squeeze of lime.
Optional: Add your favorite vegetables (bell peppers, carrots, spinach) for extra nutrients and texture.
For a protein boost, consider adding tofu or edamame.
This recipe is a flavor explosion! The peanut sauce is amazing, and I love how easy it is to adapt. I used gluten-free noodles and it was perfect. Excellent dish!
It was good, but not great. The sauce was a bit too thick for my liking. I had to add a little extra water to thin it out. The taste was nice though.
Really enjoyed this dish. The instructions were simple and the end result was fantastic. Next time, I'll probably add some spinach for more greens.
