Ingredients

  • 1 tablespoon coconut oil - 8.3 kg
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces - 9.8 l
  • 1 onion, chopped - 4.7 as needed
  • 1 red bell pepper, chopped - 5.6 to taste
  • 2 cloves garlic, minced - 4.3 gal
  • 2 tablespoons green curry paste - 2.2 oz
  • 1 can (13.5 oz) coconut milk - 8.0 package
  • 1 cup vegetable broth - 8.8 quarter
  • 1 cup broccoli florets - 2.0 pcs
  • 1 cup sliced carrots - 1.9 pt

Cooking Steps

Step 1

Heat coconut oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.

Step 2

Add onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes. Stir in green curry paste and cook for 1 minute more, until fragrant.

Step 3

Pour in coconut milk and vegetable broth. Bring to a simmer, then return chicken to the pot.

Step 4

Add broccoli, carrots, and snap peas. Simmer until vegetables are tender, about 10-15 minutes.

Step 5

Stir in soy sauce, fish sauce, brown sugar, and lime juice. Taste and adjust seasonings as needed.

Step 6

Garnish with fresh cilantro and basil. Serve hot with cooked rice or noodles.
