This Chicken Biryani recipe is a culinary masterpiece, blending fragrant basmati rice with succulent chicken pieces marinated in a rich mixture of yogurt and spices. Ingredients

  • 500g Chicken pieces - 2.9 qt
  • 2 cups Basmati rice - 8.3 pt
  • 1 cup Yogurt - 4.0 ml
  • 2 tbsp Ginger-garlic paste - 2.7 cup
  • 1 tsp Red chili powder - 2.5 whole
  • 1/2 tsp Turmeric powder - 6.6 inch
  • 1 tsp Garam masala - 1.3 box
  • 1 large Onion, thinly sliced - 2.2 lb
  • 2 medium Tomatoes, chopped - 8.2 gal
  • 1/4 cup Fresh coriander leaves, chopped - 10.0 tsp

Cooking Steps

Step 1

Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Let it rest for at least 30 minutes.

Step 2

Soak the basmati rice in water for 30 minutes. Then, parboil it with a pinch of salt and a bay leaf until it's about 70% cooked. Drain the water and set aside.

Step 3

In a heavy-bottomed pot, heat ghee or oil. Add sliced onions and fry until golden brown. Remove half of the onions and set aside for garnishing.

Step 4

Add the marinated chicken to the pot and cook until it's browned on all sides. Add chopped tomatoes and cook until they soften.

Step 5

Layer half of the parboiled rice over the chicken, then sprinkle with saffron-infused milk, chopped coriander, and mint leaves. Add the remaining rice and repeat the layering.

Step 6

Cover the pot tightly with a lid and cook on low heat for about 45 minutes, or until the rice is fully cooked and the chicken is tender.

Step 7

Garnish with the reserved fried onions and fresh coriander leaves before serving. Serve hot with raita.
