Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Let it rest for at least 30 minutes.
Soak the basmati rice in water for 30 minutes. Then, parboil it with a pinch of salt and a bay leaf until it's about 70% cooked. Drain the water and set aside.
In a heavy-bottomed pot, heat ghee or oil. Add sliced onions and fry until golden brown. Remove half of the onions and set aside for garnishing.
Add the marinated chicken to the pot and cook until it's browned on all sides. Add chopped tomatoes and cook until they soften.
Layer half of the parboiled rice over the chicken, then sprinkle with saffron-infused milk, chopped coriander, and mint leaves. Add the remaining rice and repeat the layering.
Cover the pot tightly with a lid and cook on low heat for about 45 minutes, or until the rice is fully cooked and the chicken is tender.
Garnish with the reserved fried onions and fresh coriander leaves before serving. Serve hot with raita.
A fantastic recipe! The chicken was very tender and flavorful. The rice was cooked to perfection. I highly recommend it!
Best Biryani ever! Followed the instructions, and it turned out perfectly. The saffron and coriander really elevate the dish. I will definitely make this again.
Very good. I added a touch more chili powder, as I prefer a spicier Biryani. The recipe is well-written, and the results are delicious. Definitely worth trying!
A really solid Biryani. I followed the recipe closely, and it turned out great. The coriander leaves added a nice freshness. I might try adding some green chilies next time for a bit more kick.
This recipe is amazing! The saffron milk really made a difference, and the caramelized onions added a lovely sweetness. I would suggest adding a bit more spice for those who like it hot, but overall, a wonderful dish.
