Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Let it rest for at least 30 minutes.
Soak the basmati rice in water for 30 minutes. Then, parboil it with a pinch of salt and a bay leaf until it's about 70% cooked. Drain the water and set aside.
In a heavy-bottomed pot, heat ghee or oil. Add sliced onions and fry until golden brown. Remove half of the onions and set aside for garnishing.
Add the marinated chicken to the pot and cook until it's browned on all sides. Add chopped tomatoes and cook until they soften.
Layer half of the parboiled rice over the chicken, then sprinkle with saffron-infused milk, chopped coriander, and mint leaves. Add the remaining rice and repeat the layering.
Cover the pot tightly with a lid and cook on low heat for about 45 minutes, or until the rice is fully cooked and the chicken is tender.
Garnish with the reserved fried onions and fresh coriander leaves before serving. Serve hot with raita.
It was okay. The flavors were there, but it didn't wow me. I might try experimenting with different spices next time to see if I can improve it.
This recipe is a keeper! The slow cooking process really makes a difference, allowing the flavors to meld beautifully. The aroma is just divine, and the taste is even better than I imagined. Highly recommend!
Incredible! The layers of flavor are just phenomenal. The chicken was so tender and the rice was fluffy and fragrant. Definitely making this again.
I struggled with this recipe. My rice ended up a bit mushy, and the chicken wasn't as flavorful as I hoped. I'm not sure what went wrong, but I'll try again with some modifications.
A fantastic recipe! The chicken was very tender and flavorful. The rice was cooked to perfection. I highly recommend it!
