
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
In a large bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Mix well.
Pour half of the tomato mixture into the prepared baking dish.
Arrange slices of mozzarella cheese over the tomato mixture.
Pour the remaining tomato mixture over the mozzarella cheese.
Bake in the preheated oven for 30-40 minutes, or until the cheese is melted and bubbly, and the tomatoes are tender.
Garnish with fresh basil leaves before serving. Serve hot with crusty bread.
It was okay. Nothing special, but not bad either. I'd make it again if I had all the ingredients on hand, but I probably wouldn't go out of my way.
A really tasty and simple recipe. I used canned crushed tomatoes because I was short on time, and it still turned out great. The mozzarella melted beautifully.
