Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
In a large bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Mix well.
Pour half of the tomato mixture into the prepared baking dish.
Arrange slices of mozzarella cheese over the tomato mixture.
Pour the remaining tomato mixture over the mozzarella cheese.
Bake in the preheated oven for 30-40 minutes, or until the cheese is melted and bubbly, and the tomatoes are tender.
Garnish with fresh basil leaves before serving. Serve hot with crusty bread.
It was okay. The tomatoes were a little bland, even with the basil. Maybe I needed to add more seasoning. The mozzarella was nice and creamy.
Very good recipe. I added some zucchini as suggested, and it was a great addition. The tomatoes were a bit watery, but the flavor was still fantastic. Next time I'll try the smoked mozzarella!
I found this recipe a bit disappointing. The tomatoes were a bit mushy, and the flavor wasn't as vibrant as I expected. Maybe I did something wrong.
I really enjoyed this recipe. It's quick, easy and perfect for a light lunch or dinner. I added some balsamic glaze at the end for an extra touch of flavor.
This recipe is a game changer! So easy to make and the flavors are incredible. The fresh basil is key! Highly recommend using good quality tomatoes for the best results.
