Pour half of the tomato mixture into the prepared baking dish.
Arrange slices of mozzarella cheese over the tomato mixture.
Pour the remaining tomato mixture over the mozzarella cheese.
Bake in the preheated oven for 30-40 minutes, or until the cheese is melted and bubbly, and the tomatoes are tender.
Garnish with fresh basil leaves before serving. Serve hot with crusty bread.
This is my new go-to recipe! So easy and flavorful. The crusty bread is a must-have to soak up all the delicious sauce. I sometimes add a pinch of red pepper flakes for a little extra zing.
