Season the chicken pieces generously with salt and pepper. Dredge lightly in flour, shaking off any excess.
Heat olive oil in a large Dutch oven or pot over medium-high heat. Brown the chicken on all sides, then remove and set aside.
Add the chopped onion and garlic to the pot and cook until softened, about 5 minutes. Add the mushrooms and cook until they release their moisture and start to brown.
Stir in the tomato paste and cook for 1 minute. Pour in the white wine (if using) and scrape up any browned bits from the bottom of the pot.
Return the chicken to the pot. Add the crushed tomatoes, chicken broth, bay leaf, and thyme. Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is cooked through.
Stir in the olives and parsley. Season with salt and pepper to taste. Remove the bay leaf before serving.
Serve hot, garnished with a fried egg on top of each serving (optional).
This is a fantastic recipe! The Chicken Marengo was easy to make, and the results were outstanding. The sauce was particularly delicious. I've made it twice already, and it's always a hit.
Absolutely fantastic! The chicken was incredibly tender, and the sauce was rich and flavorful. The mushrooms and olives added a wonderful depth of flavor. This is a new family favorite. I served it with crusty bread as suggested, and it was perfect.
This recipe is a true gem! The Chicken Marengo was a showstopper. The chicken was incredibly tender, and the sauce was rich and flavorful. My family loved it. Highly recommend it!
This recipe is a keeper! The flavors are outstanding, and it’s a comforting and delicious meal. I especially loved the combination of the mushrooms and the tomato sauce. This is definitely going into my regular rotation.
The dish was okay, but nothing special. I found the flavors a little bland. Maybe I needed to add more seasoning. It wasn't bad, but not something I would rush to make again.
