Season the chicken pieces generously with salt and pepper. Dredge lightly in flour, shaking off any excess.
Heat olive oil in a large Dutch oven or pot over medium-high heat. Brown the chicken on all sides, then remove and set aside.
Add the chopped onion and garlic to the pot and cook until softened, about 5 minutes. Add the mushrooms and cook until they release their moisture and start to brown.
Stir in the tomato paste and cook for 1 minute. Pour in the white wine (if using) and scrape up any browned bits from the bottom of the pot.
Return the chicken to the pot. Add the crushed tomatoes, chicken broth, bay leaf, and thyme. Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is cooked through.
Stir in the olives and parsley. Season with salt and pepper to taste. Remove the bay leaf before serving.
Serve hot, garnished with a fried egg on top of each serving (optional).
A very good recipe overall. The chicken came out perfectly tender, and the sauce was rich and flavorful. I added a bay leaf for extra depth of flavor, which worked really well.
I enjoyed making this recipe. The steps were easy to follow, and the end result was delicious. The combination of ingredients works perfectly together. I will definitely make this again.
A bit underwhelming. While the dish was edible, I found the flavors a little muted. Perhaps I didn't use enough herbs or garlic. I might try it again with some adjustments.
This recipe is a must-try! The Chicken Marengo was absolutely phenomenal. The rich sauce, tender chicken, and the added flavors were incredible. I have made it several times, and it's always a hit.
Very good! The Chicken Marengo turned out to be delicious, with the chicken perfectly cooked. The sauce was rich and flavorful, though I added a touch more herbs for personal preference.
