
Season the chicken pieces generously with salt and pepper. Dredge lightly in flour, shaking off any excess.
Heat olive oil in a large Dutch oven or pot over medium-high heat. Brown the chicken on all sides, then remove and set aside.
Add the chopped onion and garlic to the pot and cook until softened, about 5 minutes. Add the mushrooms and cook until they release their moisture and start to brown.
Stir in the tomato paste and cook for 1 minute. Pour in the white wine (if using) and scrape up any browned bits from the bottom of the pot.
Return the chicken to the pot. Add the crushed tomatoes, chicken broth, bay leaf, and thyme. Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is cooked through.
Stir in the olives and parsley. Season with salt and pepper to taste. Remove the bay leaf before serving.
Serve hot, garnished with a fried egg on top of each serving (optional).
A good solid recipe. The flavors were great, and it was relatively simple to put together. I served it with rice, which soaked up the delicious sauce beautifully. I would recommend this for a weeknight meal.
The dish was alright, but not quite what I expected. The chicken was a little dry. I think the recipe needs a little more liquid in the sauce during the braising process.
