
In a large bowl, season the chicken breasts with salt, pepper, and paprika.
Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.
Add the sliced mushrooms to the skillet and sauté until softened and lightly browned, about 5-7 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Reduce the heat to low and stir in the crème fraîche and Dijon mustard. Season with salt and pepper to taste.
Return the chicken breasts to the skillet and simmer in the sauce for 10-15 minutes, or until cooked through.
Serve the Chicken Stroganoff over a bed of cooked egg noodles. Garnish with fresh parsley, if desired.
