In another shallow dish, beat eggs. Dip each chicken breast in the egg mixture, then dredge in the breadcrumb mixture, pressing to coat well.
Place breaded chicken breasts on the prepared baking sheet. Drizzle with olive oil.
Bake for 20-25 minutes, or until chicken is cooked through and golden brown.
Remove from oven and top each chicken breast with marinara sauce and mozzarella cheese slices.
Return to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
