Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
In another shallow dish, whisk eggs. Dredge each chicken breast in the eggs, then coat thoroughly with the breadcrumb mixture, pressing to adhere.
Heat olive oil in a large skillet over medium-high heat. Cook chicken breasts for 3-4 minutes per side, or until golden brown. They don't need to be cooked through at this point.
Transfer chicken breasts to the prepared baking sheet. Top each with marinara sauce, mozzarella cheese, and additional Parmesan cheese.
Bake in the preheated oven for 15-20 minutes, or until cheese is melted and bubbly and chicken is cooked through.
Let rest for a few minutes before serving. Garnish with fresh basil, if desired.
I wasn't a fan. The chicken was tough, and the sauce was too sweet. The breading also fell off easily. I won't make this again.
Excellent recipe. Simple and tasty. I added some garlic powder to the breadcrumbs for extra flavor. Turned out great!
A solid chicken parmesan. The instructions were clear and the dish turned out well. I recommend using fresh basil to garnish at the end. Really elevates the flavor.
