Melt butter in a large pot over medium heat. Add sliced onions and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized.
Stir in garlic and cook for 1 minute. Add flour and cook for another minute, stirring constantly.
Pour in beef broth, dry red wine, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Preheat broiler. Ladle soup into oven-safe bowls. Top each bowl with a slice of crusty bread and a generous amount of grated Gruyère cheese.
Broil for 2-3 minutes, or until cheese is melted and bubbly.
Remove from broiler and let cool slightly before serving. Garnish with fresh parsley if desired.
Serve immediately and enjoy the rich and satisfying flavors of this classic soup.
A decent French onion soup. The flavor was good, but the onions weren't as sweet as I expected. Maybe I didn't cook them long enough.
It was good, but not amazing. My onions didn't caramelize quite as much as I would have liked, and the broth was a little bland. I might try it again with a few adjustments.
Great recipe. I used a mix of yellow and white onions for a bit more complexity. The broth was flavorful, and the cheese was nicely browned. Will definitely make again.
Fantastic recipe! The aroma while cooking was heavenly. The soup was rich, savory, and perfect for a chilly evening. I'll be making this again and again.
This recipe is a winner. I followed the instructions, and the soup turned out fantastic. The only thing I would change is maybe a bit more salt in the broth. Highly recommend!
