Melt butter in a large pot over medium heat. Add sliced onions and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized.
Stir in garlic and cook for 1 minute. Add flour and cook for another minute, stirring constantly.
Pour in beef broth, dry red wine, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Preheat broiler. Ladle soup into oven-safe bowls. Top each bowl with a slice of crusty bread and a generous amount of grated Gruyère cheese.
Broil for 2-3 minutes, or until cheese is melted and bubbly.
Remove from broiler and let cool slightly before serving. Garnish with fresh parsley if desired.
Serve immediately and enjoy the rich and satisfying flavors of this classic soup.
One of the best recipes I've ever followed. The caramelization process is key, and this recipe nails it. The soup was rich, flavorful, and a total crowd-pleaser. Bravo!
Absolutely delicious! The onions were perfectly caramelized, and the broth was so rich and flavorful. The cheese was bubbly and golden. Best French onion soup I've ever had!
It was okay. The soup tasted good, but I had to add quite a bit of salt and pepper to get the flavor I wanted. Maybe the broth could use more seasoning.
Excellent recipe. I found that using a little bit of sugar during the onion caramelization process helped enhance the sweetness. A slight variation, but highly recommended!
I struggled with this recipe. The onions took forever to cook, and I ended up burning some. The broth wasn't very flavorful, either. I think I need more practice.
