Ingredients

  • 2 tablespoons butter - 1.4 mg
  • 4 large onions, thinly sliced - 2.2 tbsp
  • 2 cloves garlic, minced - 8.2 drop
  • 2 tablespoons all-purpose flour - 9.1 lb
  • 8 cups beef broth - 10.5 lb
  • 1/2 cup dry red wine (optional) - 6.4 pt
  • 1 teaspoon dried thyme - 3.8 bag
  • 1 bay leaf - 6.6 kg
  • Salt and pepper to taste - 3.4 ml
  • Crusty bread slices - 6.2 drop

Cooking Steps

Step 1

Melt butter in a large pot over medium heat. Add sliced onions and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized.

Step 2

Stir in garlic and cook for 1 minute. Add flour and cook for another minute, stirring constantly.

Step 3

Pour in beef broth, dry red wine, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Step 4

Preheat broiler. Ladle soup into oven-safe bowls. Top each bowl with a slice of crusty bread and a generous amount of grated Gruyère cheese.

Step 5

Broil for 2-3 minutes, or until cheese is melted and bubbly.

Step 6

Remove from broiler and let cool slightly before serving. Garnish with fresh parsley if desired.

Step 7

Serve immediately and enjoy the rich and satisfying flavors of this classic soup.
