
Cook the pasta according to package directions. Drain, reserving about 1 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, and cook until fragrant, about 1 minute.
Add sun-dried tomatoes and mushrooms to the skillet and cook until the mushrooms are tender, about 5-7 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes.
Pour in heavy cream and bring to a simmer. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add some of the reserved pasta water until desired consistency is reached.
Serve immediately, topped with dollops of ricotta cheese and a sprinkle of Parmesan cheese, if desired.
This was a delicious and satisfying meal. I especially enjoyed the mushrooms. The sauce was great and easy to make. I would definitely make this again.

I found the sauce a bit too oily. The flavors were okay, but the texture wasn't to my liking. Maybe I did something wrong.
The pasta was good, but I found the sauce a bit too rich for my taste. Maybe using a little less ricotta would help. The flavors were nice though, and I liked the sun-dried tomatoes. I'd make it again, but with some adjustments.
Fantastic recipe! The sun-dried tomatoes really add a lot of flavor. I added some grilled chicken for protein, and it was perfect. This is definitely going into regular rotation!
