Cook the pasta according to package directions. Drain, reserving about 1 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, and cook until fragrant, about 1 minute.
Add sun-dried tomatoes and mushrooms to the skillet and cook until the mushrooms are tender, about 5-7 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes.
Pour in heavy cream and bring to a simmer. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add some of the reserved pasta water until desired consistency is reached.
Serve immediately, topped with dollops of ricotta cheese and a sprinkle of Parmesan cheese, if desired.
This is my new go-to pasta recipe! The sauce is incredibly creamy and flavorful, and the spinach and mushrooms add a nice texture. It's quick, easy, and tastes like something you'd get in a fancy restaurant. So good!
I found the sauce to be too heavy and the flavors didn't really blend well for me. It might have been my fault, but I wasn't a fan. I followed the recipe exactly.
I loved how quick and easy this recipe was. The sauce was creamy and delicious, and I appreciated the suggestion to add protein. I added shrimp, and it was a hit. I'll definitely be making this again.
