Cook the pasta according to package directions. Drain, reserving about 1 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, and cook until fragrant, about 1 minute.
Add sun-dried tomatoes and mushrooms to the skillet and cook until the mushrooms are tender, about 5-7 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes.
Pour in heavy cream and bring to a simmer. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add some of the reserved pasta water until desired consistency is reached.
Serve immediately, topped with dollops of ricotta cheese and a sprinkle of Parmesan cheese, if desired.
This recipe is fantastic! The combination of flavors is outstanding. It's a perfect balance of creamy, savory, and a little spicy. I've made this several times, and it's always a crowd-pleaser. Highly recommend!
Very tasty and easy to adapt. I used a different type of pasta, and it still worked great. The sauce is the star of the show! Definitely worth trying.
Fantastic recipe! The sun-dried tomatoes really add a lot of flavor. I added some grilled chicken for protein, and it was perfect. This is definitely going into regular rotation!
Amazing! The flavors are incredible and it's so easy to make. Perfect for a weeknight dinner. I've made it twice already, and everyone loves it. The recipe is a keeper!
Really enjoyed this recipe. It was easy to follow and the creamy sauce was fantastic. I used kale instead of spinach, and it worked great. My only suggestion would be to add a little more garlic.
