This delightful French Apple Cake, or Gâteau Invisible aux Pommes, is a masterpiece of simplicity and flavor. Imagine incredibly thin layers of apple slices held together by a light, delicate batter. It's so moist it practically melts in your mouth! The name “Invisible Cake” comes from the fact that the batter nearly disappears during baking, allowing the apples to truly shine. With its minimal ingredients and straightforward preparation, it is the perfect cake to enjoy with your friends and family, especially during a cold day with a glass of wine. This cake makes a fantastic dessert or afternoon treat, pairing beautifully with a dollop of whipped cream or a scoop of vanilla ice cream. The delicate apple flavor, hints of vanilla and cinnamon, and moist texture make it irresistible. Make sure to make one for yourself and enjoy this easy and delicious cake!

Ingredients

  • 4-5 medium apples (such as Honeycrisp, Fuji, or Gala) - 6.6 l
  • 2 large eggs - 2.7 lb
  • 1/2 cup (100g) granulated sugar - 3.7 tsp
  • 1/4 cup (57g) unsalted butter, melted - 6.7 drop
  • 1/2 cup (120ml) milk - 2.8 bag
  • 1 teaspoon vanilla extract - 7.7 tsp
  • 1/4 teaspoon salt - 8.6 gal
  • 3/4 cup (90g) all-purpose flour - 10.4 pinch
  • 1 teaspoon baking powder - 2.5 half
  • 1/2 teaspoon ground cinnamon (optional) - 3.5 as needed

Cooking Steps

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Step 2

Peel, core, and thinly slice the apples using a mandoline or a sharp knife. The thinner, the better.

Step 3

In a large bowl, whisk together the eggs, sugar, melted butter, milk, vanilla extract, and salt.

Step 4

Gradually add the flour and baking powder to the wet ingredients, whisking until just combined. Be careful not to overmix.

Step 5

Gently fold the apple slices into the batter, ensuring they are well coated. You can also add the cinnamon in this step.

Step 6

Pour the apple mixture into the prepared cake pan, spreading evenly. Gently tap the pan on the counter to release any air bubbles.

Step 7

Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover loosely with foil.

Step 8

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.

Loved this recipe! It's a great way to use up a lot of apples. The cake was delicious with a scoop of vanilla ice cream. I would give it a try again.

Simple and delicious! This cake is perfect for a quick dessert. The apple slices held their shape well. Great recipe, and great taste. Would recommend.

The cake was good, but it took longer to bake than I expected. The apples were a little soft. I think I'll try adjusting the oven temperature next time. I still enjoyed it though.

The cake looked beautiful, but I found it a bit bland. I think it could benefit from a bit more spice or maybe a hint of lemon zest. I might try it again, but I would make some adjustments.

This cake is a winner! I followed the recipe and it turned out beautifully. The apple flavor is really prominent, and the cake is incredibly moist. I might add a bit more cinnamon next time.
