Gradually add the flour and baking powder to the wet ingredients, whisking until just combined. Be careful not to overmix.
Gently fold the apple slices into the batter, ensuring they are well coated. You can also add the cinnamon in this step.
Pour the apple mixture into the prepared cake pan, spreading evenly. Gently tap the pan on the counter to release any air bubbles.
Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover loosely with foil.
Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
This cake is a winner! I followed the recipe and it turned out beautifully. The apple flavor is really prominent, and the cake is incredibly moist. I might add a bit more cinnamon next time.
