Ingredients

  • 1 red bell pepper, chopped - 4.3 pt
  • 1 yellow bell pepper, chopped - 7.9 inch
  • 1 zucchini, chopped - 9.2 pcs
  • 1 red onion, chopped - 9.5 half
  • 1 cup cherry tomatoes, halved - 2.3 tsp
  • 4 tablespoons olive oil, divided - 2.6 bottle
  • Salt and pepper to taste - 5.0 cm
  • 1 teaspoon dried oregano - 7.4 cup
  • 8 ounces halloumi cheese, sliced - 7.8 cup
  • 2 tablespoons lemon juice - 4.9 fl oz

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Chop the bell peppers, zucchini, red onion, and cherry tomatoes into bite-sized pieces.

Step 2

In a large bowl, toss the chopped vegetables with 2 tablespoons of olive oil, salt, pepper, and dried oregano. Spread the vegetables in a single layer on a baking sheet.

Step 3

Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized. While the vegetables are roasting, prepare the lemon vinaigrette. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, minced garlic, Dijon mustard, and a pinch of salt and pepper.

Step 4

Slice the halloumi cheese into 1/4-inch thick slices. Heat a grill pan or outdoor grill over medium heat. Grill the halloumi slices for 2-3 minutes per side, or until they are golden brown and slightly softened.

Step 5

Once the vegetables are roasted and the halloumi is grilled, transfer the vegetables to a serving platter. Arrange the grilled halloumi slices on top of the vegetables.

Step 6

Drizzle the lemon vinaigrette over the vegetables and halloumi. Garnish with fresh parsley, if desired.

Step 7

Serve immediately and enjoy this colorful and flavorful Mediterranean dish.

    Pretty good, but the halloumi stuck to the grill a bit. I'll try oiling the grill more next time. The flavors were good, though, and I liked the variety of vegetables. The vinaigrette was great.

    I really enjoyed this. I used different vegetables, and it still tasted great. I'd suggest maybe adding a little bit of herbs, like oregano, to the vegetables while roasting. Otherwise, it's fantastic!
