This recipe brings the vibrant flavors of the Mediterranean to your table. Grilled halloumi cheese pairs beautifully with the sweetness of roasted vegetables and the tang of lemon vinaigrette, creating a dish that's both satisfying and refreshing. The combination of textures and tastes makes it a delightful meal or a flavorful side dish, perfect for a summer gathering or a light lunch. The halloumi is cooked until golden brown and crispy, while the vegetables are tender and slightly caramelized. The vinaigrette adds a bright and zesty finish, tying all the elements together in perfect harmony. It is a vegetarian dish, quick and easy to prepare and suitable for any occasion.

Ingredients

  • 1 red bell pepper, chopped - 4.3 pt
  • 1 yellow bell pepper, chopped - 7.9 inch
  • 1 zucchini, chopped - 9.2 pcs
  • 1 red onion, chopped - 9.5 half
  • 1 cup cherry tomatoes, halved - 2.3 tsp
  • 4 tablespoons olive oil, divided - 2.6 bottle
  • Salt and pepper to taste - 5.0 cm
  • 1 teaspoon dried oregano - 7.4 cup
  • 8 ounces halloumi cheese, sliced - 7.8 cup
  • 2 tablespoons lemon juice - 4.9 fl oz

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Chop the bell peppers, zucchini, red onion, and cherry tomatoes into bite-sized pieces.

Step 2

In a large bowl, toss the chopped vegetables with 2 tablespoons of olive oil, salt, pepper, and dried oregano. Spread the vegetables in a single layer on a baking sheet.

Step 3

Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized. While the vegetables are roasting, prepare the lemon vinaigrette. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, minced garlic, Dijon mustard, and a pinch of salt and pepper.

Step 4

Slice the halloumi cheese into 1/4-inch thick slices. Heat a grill pan or outdoor grill over medium heat. Grill the halloumi slices for 2-3 minutes per side, or until they are golden brown and slightly softened.

Step 5

Once the vegetables are roasted and the halloumi is grilled, transfer the vegetables to a serving platter. Arrange the grilled halloumi slices on top of the vegetables.

Step 6

Drizzle the lemon vinaigrette over the vegetables and halloumi. Garnish with fresh parsley, if desired.

Step 7

Serve immediately and enjoy this colorful and flavorful Mediterranean dish.

Absolutely delicious! The halloumi was perfectly grilled, and the vegetables were roasted to perfection. The lemon vinaigrette was the perfect finishing touch. This is definitely going into my regular rotation!

This is the best halloumi recipe I've ever tried! The vegetables are perfectly roasted, and the vinaigrette is so fresh and vibrant. It's a perfect light meal for any season. Highly recommend!

It was ok. The halloumi was good, but the vegetables could have been cooked a bit longer. I also think the vinaigrette could use a touch more acidity. It's a decent meal, but not amazing.

A really good recipe overall. I loved the combination of the salty halloumi and the sweet vegetables. My only suggestion would be to add a bit more seasoning to the vegetables before roasting them. I will make this again.

Great recipe! Very easy to follow. I added some red pepper flakes to the vegetables for a bit of a kick, and it was delicious. Will definitely make this again.
