It was ok. The halloumi was good, but the vegetables could have been cooked a bit longer. I also think the vinaigrette could use a touch more acidity. It's a decent meal, but not amazing.
A really good recipe overall. I loved the combination of the salty halloumi and the sweet vegetables. My only suggestion would be to add a bit more seasoning to the vegetables before roasting them. I will make this again.
Great recipe! Very easy to follow. I added some red pepper flakes to the vegetables for a bit of a kick, and it was delicious. Will definitely make this again.
