Preheat your oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels.
In a small bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
Rub the herb mixture all over the chicken, making sure to get some under the skin of the breast. Place the lemon halves inside the chicken cavity.
Place the chicken in a roasting pan and roast for 45 minutes, or until the internal temperature reaches 165°F (74°C).
Remove the chicken from the oven and let it rest for 10 minutes before carving.
Carve the chicken and serve with your favorite sides. Roasted vegetables or a fresh salad pair perfectly.
Enjoy your delicious Lemon Herb Roasted Chicken!
Unfortunately, it didn't work out well for me. The chicken was dry, and the flavor was a bit overpowering. I think I overcooked it.
Fantastic recipe! The chicken was cooked to perfection, and the flavors were incredible. The herbs and lemon made all the difference. Will make this again and again!
Simple, yet delicious. The chicken roasted perfectly, and the flavors were wonderful. I'll be making this again soon. A great weeknight meal.
Very good. I made a few adjustments based on what I had on hand (used dried herbs). Still turned out well. Would recommend.
It was alright. Not the best chicken I've ever made, but not the worst either. The skin was a little soggy, and the herbs could have been more pronounced.
