
Preheat your oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels.
In a small bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
Rub the herb mixture all over the chicken, making sure to get some under the skin of the breast. Place the lemon halves inside the chicken cavity.
Place the chicken in a roasting pan and roast for 45 minutes, or until the internal temperature reaches 165°F (74°C).
Remove the chicken from the oven and let it rest for 10 minutes before carving.
Carve the chicken and serve with your favorite sides. Roasted vegetables or a fresh salad pair perfectly.

It was okay. The chicken tasted a bit too lemony for my taste. Perhaps I used too much lemon zest. The skin was good though.
