
Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels. This ensures crispy skin.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper. Mix well to create the herb mixture.
Loosen the skin of the chicken breast with your fingers and rub about 2 tablespoons of the herb mixture under the skin of each breast. This adds flavor directly to the meat.
Rub the remaining herb mixture all over the outside of the chicken. Place the lemon halves and garlic cloves inside the cavity of the chicken.
Place the chicken in a roasting pan and arrange the chopped carrots and potatoes around it. Drizzle the vegetables with olive oil and season with salt and pepper.
Roast the chicken for about 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Baste the chicken with pan juices every 20 minutes to keep it moist and flavorful.
Let the chicken rest for 10 minutes before carving and serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
