
Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels. This ensures crispy skin.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper. Mix well to create the herb mixture.
Loosen the skin of the chicken breast with your fingers and rub about 2 tablespoons of the herb mixture under the skin of each breast. This adds flavor directly to the meat.
Rub the remaining herb mixture all over the outside of the chicken. Place the lemon halves and garlic cloves inside the cavity of the chicken.
