Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels. This ensures crispy skin.
In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper. Mix well to create the herb mixture.
Loosen the skin of the chicken breast with your fingers and rub about 2 tablespoons of the herb mixture under the skin of each breast. This adds flavor directly to the meat.
Rub the remaining herb mixture all over the outside of the chicken. Place the lemon halves and garlic cloves inside the cavity of the chicken.
Place the chicken in a roasting pan and arrange the chopped carrots and potatoes around it. Drizzle the vegetables with olive oil and season with salt and pepper.
Roast the chicken for about 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Baste the chicken with pan juices every 20 minutes to keep it moist and flavorful.
Let the chicken rest for 10 minutes before carving and serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
Very good. The chicken was cooked perfectly and the flavor combination was excellent. I would recommend using a meat thermometer to ensure the chicken is fully cooked. Needs more instructions.
It was okay. The chicken was cooked well, but I felt like the lemon flavor could have been more pronounced. Maybe more lemon zest next time?
This recipe is a winner! The chicken was incredibly moist and flavorful. The herbs and lemon created such a wonderful aroma. A definite five-star meal!
The chicken was pretty good, but the skin wasn't as crispy as I'd hoped. Perhaps I needed to roast it for longer. The flavor was nice though.
