Preheat your oven to 400°F (200°C). Rinse the chicken inside and out, then pat it dry with paper towels.
In a small bowl, mix together the softened butter, minced garlic, lemon zest, chopped rosemary, thyme, salt, and black pepper.
Carefully loosen the skin of the chicken breast and rub half of the herb butter mixture under the skin. Rub the remaining mixture all over the outside of the chicken.
Place the lemon halves and onion wedges inside the cavity of the chicken.
Place the chicken in a roasting pan and roast for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Let the chicken rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve with the pan juices spooned over the top. Garnish with fresh herbs and lemon slices, if desired.
Enjoyed this recipe. The chicken was flavorful and the herbs complemented the lemon well. I might try adding some garlic next time for an extra layer of flavor. Simple and satisfying.
A decent recipe. The flavor was good, but I had to cook the chicken a bit longer than expected. The skin could have been crispier. Overall, a simple and easy meal.
It was okay. The chicken was cooked through, but the skin wasn't as crispy as I would have liked. Maybe I needed to cook it longer. The flavor was good, though. I might try it again with a few adjustments.
This recipe was quite good. The chicken turned out juicy and flavorful. I added a bit more herbs than the recipe may have suggested, which I think enhanced the taste. The gravy made from the pan juices was a great addition.
This was a great recipe! The chicken turned out really well, and the herbs gave it a wonderful aroma. The pan juices made a delicious gravy. Easy to follow and the results were delicious.
