This delightful Lemon Herb Roasted Chicken recipe is a symphony of flavors, combining the zesty brightness of lemon with the aromatic essence of fresh herbs. Roasting the chicken whole ensures a succulent and tender interior, while the skin becomes beautifully golden and crispy. The combination of herbs and lemon creates a fragrant and flavorful crust that infuses the entire chicken. This recipe is perfect for a comforting family dinner or an elegant gathering, offering a balance of simplicity and sophistication. With minimal prep time and straightforward steps, you can achieve a restaurant-quality dish right in your own kitchen. The pan juices, infused with herbs and lemon, make an exquisite base for a light and flavorful gravy, further enhancing the dish's appeal. Serve alongside roasted vegetables or a fresh salad for a complete and satisfying meal. It’s a dish that’s both easy to make and impressive to serve. The aroma alone is enough to make mouths water, making it an instant favorite.

Ingredients

  • 1 whole chicken (about 3-4 lbs) - 5.3 to taste
  • 1/4 cup unsalted butter, softened - 6.6 l
  • 2 cloves garlic, minced - 5.0 ml
  • 1 lemon, zested and halved - 8.1 fl oz
  • 2 sprigs fresh rosemary, chopped - 1.8 ml
  • 2 sprigs fresh thyme, chopped - 1.6 cup
  • 1 onion, quartered - 8.4 g
  • Salt and black pepper to taste - 7.3 tbsp
4 Servings

Cooking Steps

Step 1

Preheat your oven to 400°F (200°C). Rinse the chicken inside and out, then pat it dry with paper towels.

Step 2

In a small bowl, mix together the softened butter, minced garlic, lemon zest, chopped rosemary, thyme, salt, and black pepper.

Step 3

Carefully loosen the skin of the chicken breast and rub half of the herb butter mixture under the skin. Rub the remaining mixture all over the outside of the chicken.

Step 4

Place the lemon halves and onion wedges inside the cavity of the chicken.

Step 5

Place the chicken in a roasting pan and roast for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

Step 6

Let the chicken rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.

Step 7

Carve the chicken and serve with the pan juices spooned over the top. Garnish with fresh herbs and lemon slices, if desired.

Best roasted chicken I've ever made! The lemon and herbs were a perfect combination. The chicken was incredibly juicy and flavorful. The gravy was amazing, too. Will definitely make this again.
