Preheat your oven to 400°F (200°C). Rinse the chicken inside and out, then pat it dry with paper towels.
In a small bowl, mix together the softened butter, minced garlic, lemon zest, chopped rosemary, thyme, salt, and black pepper.
Carefully loosen the skin of the chicken breast and rub half of the herb butter mixture under the skin. Rub the remaining mixture all over the outside of the chicken.
Place the lemon halves and onion wedges inside the cavity of the chicken.
Place the chicken in a roasting pan and roast for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Let the chicken rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.
Carve the chicken and serve with the pan juices spooned over the top. Garnish with fresh herbs and lemon slices, if desired.
Very tasty chicken! I particularly enjoyed the depth of flavor the herbs added. The instructions were easy to follow. My only suggestion would be to provide a time range for cooking since oven temperatures vary.
Absolutely delicious! The chicken was so tender and the skin was perfectly crispy. The lemon and herb combination was fantastic. My family loved it and it's now a regular in our dinner rotation.
I found the chicken a bit dry. I followed the recipe, but maybe my oven was too hot. The flavor was there, but the texture wasn't ideal. I might try it again with some adjustments to the cooking time and temperature.
This recipe is a keeper! The chicken was perfectly cooked, tender, and bursting with flavor. The combination of lemon and herbs is absolutely divine. A definite go-to for a comforting meal.
This is a fantastic recipe! The aroma while it was roasting filled the whole house. The lemon and herbs created such a fresh and inviting flavor. It was easy to make and a real crowd-pleaser.
