
Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels.
In a small bowl, combine the rosemary, thyme, salt, pepper, and garlic powder.
Rub the herb mixture all over the chicken, including under the skin of the breast.
Place lemon wedges and remaining herbs inside the cavity of the chicken.
Place the chicken in a roasting pan and drizzle with olive oil.
Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 10 minutes before carving and serving.
My chicken was a bit undercooked. I should have checked the internal temperature. Otherwise, the flavors were lovely.
