Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat dry with paper towels.
In a small bowl, combine the rosemary, thyme, salt, pepper, and garlic powder.
Rub the herb mixture all over the chicken, including under the skin of the breast.
Place lemon wedges and remaining herbs inside the cavity of the chicken.
Place the chicken in a roasting pan and drizzle with olive oil.
Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 10 minutes before carving and serving.
The chicken was good, but it took longer to cook than the recipe suggested. I'd recommend using a meat thermometer to ensure it's cooked through.
Really enjoyed this recipe. It was easy to follow and the chicken turned out great. I might add a touch more herbs next time, but overall, delicious.
This recipe is amazing! The chicken was perfectly cooked, juicy, and bursting with flavor. The lemon and herbs create a fantastic combination!
Easy and delicious! The herb mix was perfect, and the chicken cooked evenly. I added some carrots and potatoes to the roasting pan.
Incredible! The best roasted chicken I've ever made. The lemon made it so vibrant and fresh. Will be making this on repeat.
