Preheat oven to 400°F (200°C). In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Place chicken pieces in the bowl and marinate for at least 15 minutes.
Chop bell peppers, zucchini, red onion, and cherry tomatoes into bite-sized pieces.
In a large baking dish, toss the vegetables with olive oil, salt, pepper, and any remaining marinade.
Arrange the marinated chicken pieces among the vegetables in the baking dish.
Bake in the preheated oven for 45 minutes, or until the chicken is cooked through and the vegetables are tender.
Garnish with fresh parsley before serving. Serve hot and enjoy!
I didn't enjoy this one. The flavors didn't mesh well for me. The chicken was overcooked and dry.
Simple recipe, but the taste is fantastic. I added a bit of red pepper flakes for a kick.
Good, but nothing particularly special. The vegetables could have used a bit more seasoning. The chicken was pretty good, though.
Loved the ease and the flavor! Used chicken thighs and they were very tender. Will definitely make it again.
It was okay. Nothing to write home about. I felt the chicken could have used a bit more flavor, but the vegetables were fine.
