Ingredients

  • 1 cup quinoa - 3.9 package
  • 2 cups water or vegetable broth - 1.0 oz
  • 1 cucumber, chopped - 6.0 as needed
  • 1 pint cherry tomatoes, halved - 7.4 drop
  • 1/4 red onion, finely chopped - 7.5 mg
  • 1/4 cup fresh parsley, chopped - 1.1 drop
  • 1/2 cup feta cheese, crumbled - 3.4 jar
  • 1/4 cup olive oil - 3.3 bag
  • 3 tablespoons lemon juice - 4.4 to taste
  • 1 clove garlic, minced - 2.6 cup

Cooking Steps

Step 1

Rinse the quinoa in a fine-mesh sieve under cold water for about 1-2 minutes to remove any bitterness. This step is crucial for a better taste.

Step 2

In a saucepan, combine the rinsed quinoa with 2 cups of water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the liquid is absorbed and the quinoa is fluffy.

Step 3

While the quinoa is cooking, chop the cucumber, tomatoes, red onion, and fresh parsley. Crumble the feta cheese.

Step 4

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the dressing.

Step 5

Once the quinoa is cooked, fluff it with a fork and let it cool slightly.

Step 6

In a large bowl, combine the cooked quinoa, chopped cucumber, tomatoes, red onion, parsley, and feta cheese.

Step 7

Pour the lemon dressing over the salad and toss gently to combine. Taste and adjust seasoning as needed. Serve immediately or chill for later.
